Soba Noodles

Soba Noodles are the most popular noodle in Japan. The word "soba" means is Japanese for "buckwheat", which is the principal ingredient in Soba noodles. Soba noodles also typically contain wheat, but is possible to buy 100% buckwheat noodles. Because buckwheat is not a type of wheat, noodles that are 100% buckwheat are actually wheat-free.

Soba noodles are thin and grey-ish brown, with a nutty taste. They are a great general-purpose noodle. Soba Noodles typically contain around 340 calories per 100g, and are high in protein and amino acids, particularly lysine. Soba noodles are also high in rutin, thiamine, choline, thiamine and riboflavin.
