Vegan Chilli with Walnuts

Other Ingredients

  • 2 celery sticks.
  • 1 onion.
  • 1 peppper.
  • 1 carrot.
  • Half a medium courgette.
  • 2 cloves garlic.
  • coriander, lime & avocado – to serve.


  1. Chop your vegetables. Heat the oil in a large pot over medium heat. Add the onion and garlic and cook for around 3 minutes. Add in the celery sticks, carrot, courgette & pepper, cook for around 5 minutes.
  2. Add in the spices and coconut sugar and cook until fragrant. Stir in tomatoes, tomato puree, balsamic vinegar, soya sauce and bouillon powder (if you’re using one), cover the pot and cook for around 15 minutes stirring regularly.
  3. Add in cacao powder, beans & chopped walnuts and cook for around 5 minutes.
  4. Serve with avocado, lime, coriander and rice.
