Pecan & Chia Overnight Oats

Ingredients

  Organic Jumbo Oats 1kg, Gluten Free (Sussex Wholefoods)
80g jumbo oats.

  Organic Chia Seeds 1kg (Sussex Wholefoods)
1tsp chia seeds.

  Almond Barista Drink 1l (Rude Health)
250ml non-dairy milk.

  Organic Pecan Nuts 500g (Sussex Wholefoods)
handful of pecan nuts.

  Maple Syrup, Organic 250ml (Meridian)
1 + 2tsp maple syrup.

  Organic Goji Berries (500g) - Sussex WholeFoods
1tbsp goji berries (optional).

  Fine Pink Himalayan Salt 1kg (Sussex Wholefoods)
pinch of salt.

  Organic Raw Cacao Powder 500g (Sussex Wholefoods)
1 tsp of cacao powder

Method

  1. Mix oats, chia seeds, cacao, 1tsp maple syrup and milk in a cup, then leave in the refrigerator overnight.
  2. Chop the pecan nuts and toast in a dry pan. Once slightly browned and fragrant, add 2tsp maple syrup and salt, and fry until sticky.
  3. Sprinkle pecans on top of your overnight oats. Add more topping if desired, and enjoy!
