Maitake mushrooms are a particularly firm, meaty mushroom that are popular in Japan. They are supplied dried - simply soak before cooking. Use maitake in ramen or stir-fries, alongside noodles, vegetables or fish. Of course they are Japanese in origin, but actually work quite well in any food.
Maitake mushrooms are quite nutritious, and in addition to containing minerals and b-vitamins, also contain antioxidants and amino acids that research has shown to have beneficial effects.
Dried maitake - once soaked makes up quite a large volume. With their distinctive texture and flavour, these maitake will work well in a variety of dishes.
