Grain-free paleo pancakes.

Makes 8-10 pancakes.

Lemon Poppy Seed Paleo Pancakes -Recipe

  • Free from grain: made with ground almonds, coconut and seeds.
  • Highly nutritious: very low in carbs, full of omega oils and sweetened with honey.
  • Compatible with the Paleo Diet (see below).

Ingredients

  Organic Ground Almonds (1kg) - Sussex WholeFoods
1 Tbsp Ground Almonds

  Lucuma Powder 300g (Naturya)
1 Tbsp Lucuma Powder

  Organic Desiccated Coconut (500g) - Sussex WholeFoods
20g of Fine Desiccated Coconut

  Biona Organic Coconut Milk 400ml
200ml Coconut Milk

  Sunflower Seeds | Healthy Supplies
20g Sunflower Seeds

  Honey
1-2 Tbp Honey

  Vanilla Extract Nielsen Massey 118ml
Half tsp Vanilla Extract

  Bicarbonate of Soda 100g (Borwick's)
Heaped Quarter Teaspoon of Bicarbonate of Soda

  Poppy Seeds | Healthy Supplies
1 Tbsp Poppy Seeds

1 Tbp Coconut Oil

  Profusion Himalayan Rose Pink Salt - fine 500g
1 pinch Salt (optional)

  Freeze Dried Blackberries 100g
For the topping: 2 heaped Tbsp of Freeze-dried Blackberries

  Maple Syrup, Organic 250ml (Meridian)
For the topping: 1-2 Tbsp of Maple Syrup (or to taste)

Other ingredients:

  • 3 eggs
  • 3 Tbsp Water
  • 1 Banana
  • 1 Apple

Method

  1. Put the coconut milk, ground almonds, lucuma, desiccated coconut, sunflower seeds, honey, vanilla, bicarbonate of soda and (optionally) salt into a blender and whizz for 30-60 seconds.
  2. Put into large batter jug.
  3. Whisk in the eggs until the consistency of a typical pancake batter is achieved.
  4. Add the poppy seeds.
  5. Optionally, leave to stand in a fridge for an hour.
  6. Heat up a non-stick frying pan and grease it with coconut oil.
  7. Add a thick layer of batter to the pan (around a tenth of the batter).
  8. Because the pancakes are thick, allow around 4 minutes per side.
  9. Remember that the pancakes are brittle as they do not contain flour - so use a plate to turn the pancake over, rather than flipping it.
  10. Before doing each subsequent pancake, re-grease the pan with coconut oil.
  11. To make the compote: simply soak the blackberries in the water for 10 minutes and add maple syrup to taste.

About the Paleo Diet

The Paleo Diet is a way of thinking about food based on what our pre-civilisation ancestors may have eaten. It takes its cues from the hunter-gatherer lifestyle and hence incorporates nuts, seeds and fruit rather than grains or refined foods. The Paleo Diet is thus quite high in protein, fibre and essential nutrients, and low in refined carbohydrates - making it simply a sensible way of eating. It's a contrast from crash-diets such as Atkins or Dukan, which are a bit extreme. Atkins and Dukan diets restrict you from eating fruit and vegetables, which we think is terrible!

There is no strict definition of the Paleo Diet, and indeed we don't advocate too much rigidity - instead preferring that people eat a varied diet. One variant of the Paleo Diet is the Primal Diet, which allows a little rule-bending to allow things like cheese. In general, most of your favourite recipes can be re-worked to be Paleo or Primal, and hence we call this diet the "Delicious Diet"!
