Jerk Turkey Burgers with Sweet Potato Wedges - Recipe

Nice 'n' Spicy Turkey Burger Meal

Ingredients

  Fine Oatmeal 500g, Organic (Infinity Foods)
100g Fine Oatmeal, plus extra for coating.



  Thyme 50g (Hampshire Foods)
1-2 tsp of dried Thyme

  Hampshire Foods Spanish Smoked Paprika 50g
1 tsp of Smoked Spanish Paprika.

Other Ingredients

  • 500g Turkey Mince
  • 3 Medium sized Sweet Potatoes
  • 100g-200g of Baby Spinach
  • 200g-300g of Baby Tomatoes
  • 1 lime
  • 1 large onion
  • 1 Medium Cucumber
  • 1 medium egg (optional)

Method

  1. Pre-heat the oven to 200°c/ Gas Mark 6.
  2. Sprinkle over the teaspoon of Smoked Paprika and Thyme. Use your hands to turn the potatoes and coat them in the oil and seasoning. Put into the centre of the oven for around 30-35 minutes or until browned.
  3. Finely chop the onion and mix into the mince with the Jerk Spice Blend, or alternatively mix with a food processor. Then add the oatmeal and the egg and a squeeze of lime juice.
  4. Warm the grill on a medium heat and place foil on the grill tray.
  5. Dust a dinner plate with the spare fine oatmeal. Form the Turkey mix into burgers and coat with a little oatmeal.
  6. Place the uncooked burgers onto the grill tray and brush with oil. Grill on each side for around 7-10 minutes. They will brown more than you might normally expect due to the coating of oatmeal.
  7. This recipe should make enough for 6-8 good sized burgers, or alternatively you can make smaller mini burgers for children or even form them into kebabs.
  8. Serve alongside the sweet potato wedges on a bed of baby spinach, cucumber and cherry tomatoes.
