Ume seasoning comes from the juices produced by pickling umeboshi plums. Umeboshi plums are a traditional Japanese condiment, where ume plums are slowly salt-pickled for a year. This process produces a tangy, concentrated seasoning. This Ume seasoning has quite a salty flavour and a lemon-like sourness, therefore it can be used similarly to vinegar.
Uses
Ume seasoning can be used much like vinegar. Add to salad dressings, cooked vegetables, meat marinades, tofu dips and make savoury spreads.
Please note that Ume seasoning contains salt (due to the pickling process), therefore should be used instead of salt in your recipe.
