Cinnamon Sticks

 There are 2 types of Cinnamon Sticks:
  • True Cinnamon Sticks, or Ceylon Cinnamon Sticks, are the delicate, quill-like bark of the cinnamon tree, or Cinnamomum verum, which grows mainly in South Asia.
  • Chinese Cinnamon Sticks or Cassia, are the thicker bark of Cinnamomum aromaticum, which grows mainly in China.

True Cinnamon Sticks

True Cinnamon sticks are traditionally used in desserts and mulled wine, though are also excellent in curries.
True Cinnamon Quills for desserts, mulled wine and curries.

Chinese Cinnamon Sticks (Cassia)

Chinese Cinnamon Sticks have a stronger flavour than True Cinnamon, and are usually reserved for curries.
