Naturally sweet, wheat free chestnut pancakes.

Gluten Free Chestnut Pancakes with Blueberries & Crème fraiche

Try something a little different for pancake day, with our wheat free chestnut pancakes. These are subtly flavoured with a natural sweet chestnut taste and work fantastically with sweet or savoury accompaniments.

Ingredients:

- 100g Chestnut Flour
- 100g Gluten Free All Purpose Baking Flour (or any gluten free self-raising or plain flour blend)
- 2 Eggs
- ½ Pint of Milk
- ½ tsp Bicarbonate of Soda
- 2 tbsp Olive Oil

The topping combines Biona Wild Blueberries and cool, low fat Crème fraiche.

Method:

1) Sift together all the dry ingredients.

2) Crack in the eggs, milk and olive oil. Mix until you have no lumps and a smooth batter.

3) In a pre-heated frying pan (medium heat) pour in a ladle of your batter and allow it to smooth out across the pan. These pancakes will thicken slightly and once golden on one side, flip the pancake onto it's reverse.

NB: The first pancake is often a dud (we call it the practice pancake - still tastes good though). Also note that the pancakes will appear a slightly greyer colour compared to traditional pancakes due to the chestnut flour.
