Cashew Dill & Garlic Fromage with Vegan Crackers

  • The recipe makes for around 20 small crackers and a cup of cheese.

Ingredients

  Organic Cashew Nuts (1kg) - Sussex WholeFoods
1/2 Cup Cashew Nuts

  Cashew Drink 1 Litre, Organic (Plenish)
3Tbsp Cashew Milk

  Lemon Juice 250ml (Sunita)
1Tbsp Lemon Juice

  Marigold Engevita Nutritional Yeast Flakes 125g
1Tsp Yeast Flakes

  Profusion Himalayan Rose Pink Salt - fine 500g
pinch of Salt

  Ground Black Pepper 25g, Organic (Just Natural Herbs)
pinch of Pepper

  Freeze Dried Dill 20g (Sussex Wholefoods)
1Tbsp Dill

  Plain White Flour, Gluten-Free, 1kg (Dove's Farm)
3/4 Cup Flour

  Cracked Golden Linseed [Flax Seed], Organic 500g (Biona)
1Tbsp Cracked Linseed

  Organic Chia seeds (1kg) - Sussex WholeFoods
1 Tbsp Chia Seeds

  Dehulled Hemp Seeds 250g, Organic (Just Natural Organic)
1Tbsp Hemp Seeds

  Gluten-Free Baking Powder 130g (Doves Farm)
1/4Tsp Baking Powder

  Rapeseed Oil, Organic 500ml (Biona)
1/4 Cup Rapeseed Oil 1.5 Tbsp Rapeseed Oil

Other Ingredients

  • Water.
  • 1 Garlic clove.

Method

  1. Soak cashews in water for at least 2 hours.
  2. To make the cheese, place cashews, cashew milk, lemon juice, yeast flakes, salt, pepper, garlic and dill in the bowl of a food processor or blender and blend until smooth.
  3. Preheat oven to 200°C.
  4. To make the crackers, mix flour with linseed, hemp seeds, chia seeds, rapeseed oil, baking powder, salt and 1/4 cup cold water in the bowl and work the dough with your fingers.
  5. Form the dough into a ball with your hands.
  6. Transfer to a clean surface lined with baking paper, sprinkle with little flour and use a rolling pin to roll the dough out into a rectangle less than 0.5cm thin.
  7. Use a knife to cut the dough into squares (makes around 20 crackers).
  8. Using the thin spatula, spread the crackers onto a baking paper to make sure even baking.
  9. Place in the oven and bake for 15-18 minutes or until golden brown.
