Brazil Nut, Mango & Coconut Granola

  Organic Jumbo Oats (2kg) - Sussex WholeFoods
2 cup jumbo oats

  Organic Brazil Nuts (1kg) - Sussex WholeFoods
1 cup brazil nuts

  Organic Coconut Flakes (250g) - Sussex WholeFoods
1 cup coconut flakes

  Organic Mango Slices 250g (Sussex Wholefoods)
1 cup mango slices

  Organic Sunflower Seeds (1kg) - Sussex WholeFoods
1/2 cup sunflower seeds

  Cuisine Coconut Oil 610ml, Organic & Odourless (Biona)
1/4 cup melted coconut oil

  Maple Syrup, Organic 250ml (Meridian)
1/4 cup maple syrup

  Organic Ceylon Cinnamon Powder (100g) - Sussex Wholefoods
1tsp cinnamon powder


  1. Pre-heat the oven to 150°C.
  2. Melt the coconut oil and maple syrup in a pan over gentle heat. Add cinnamon powder and stir well.
  3. Chop your brazil nuts. Mix up the jumbo oats, brazil nuts, coconut flakes and sunflower seeds in a big bowl. Add coconut oil, mix and stir well.
  4. Line a flat baking tray with baking paper, spread your granola across the baking tray and place in the oven. Bake for about 20 minutes, stirring every 5 minutes to make sure the granola cooks evenly.
  5. Chop your mangoes.
  6. Remove from the oven and allow to cool before adding the mangoes.
  7. Transfer into an airtight container and enjoy!
