Vegan Mac & Cheese

  • This is THE BEST and easiest to make Vegan Mac & Cheese.
  • This delicious plant-based comfort food is full of cheesy flavour, thanks to the fantastic combination of yeast flakes, lemon juice and lovely spices!
  • It can also be baked – just put it in an ovenproof dish, sprinkle with a generous amount of breadcrumbs and bake for about 20 minutes.
  • This recipe makes 2 generous portions.
  • You can cook up more in advance and freeze it.

Method

  1. Cover cashew nuts with boiling water and leave to stand for 1 hour (or soak them overnight).
  2. Cook your pasta according to the instructions on the packet.
  3. Place cashew nuts, soya milk, and all spices (apart from pepper) in the blender and blend until smooth. Taste your sauce and add more spice or seasoning if necessary.
  4. Drain your cooked pasta, add in your sauce and stir well.
  5. Place a portion of your mac & cheese on the plate, and garnish with ground pepper and fresh herbs.
  6. Enjoy!
