Date Cockroaches
Creepy, crunchy, and deceptively delicious – these Date Cockroaches are the ultimate Halloween snack hack! Loaded with tangy freeze-dried raspberries, creamy peanut butter, and a rich chocolate base, they look terrifyingly realistic but taste like a high-end candy bar.
Freeze-Dried Raspberries 100g (Sussex Wholefoods)
2 tbsp freeze-dried raspberries, crushed into small bits
Organic Chocolate Drops 500g (Sussex Wholefoods)
50g Dark Chocolate
Organic Smooth Peanut Butter 280g (Meridian)
1/4 cup smooth peanut butter (or almond butter)
Other Ingredients
-
1 cup dark chocolate melting wafers or chips
Method
- Line a baking sheet with parchment paper. Gently cut dates in half.
- Stuff a few crushed freeze-dried raspberry pieces inside each date.
- Spoon about 1/4 teaspoon of creamy peanut butter directly over the raspberries inside each date.
- Melt the dark chocolate, stirring until completely smooth. Use a piping bag with melted chocolate and form small, cockroach-shaped ovals of chocolate onto the lined baking sheet.
- Immediately place a stuffed date on top of each chocolate oval, pressing gently so the chocolate flares out slightly around the edges.
- Transfer the tray to the fridge for 15–20 minutes until the chocolate is fully hardened. Serve cold for maximum crunch!
