Canada is world famous for growing all types of delicious lentils, and these 'Beluga Lentils' are no exception. Beluga lentils are black, small and bead-shaped. They are known as ‘beluga’ since they closely resemble beluga caviar.
As with all lentils, these will need cooking in some water or stock for around 20-25 minutes, until tender. When cooked they have a pleasant, light crunchy texture suited to salads, stews and pasta dishes.
Beluga lentils work well with fish and chicken dishes, as well as mixed with other pulses to create a flavoursome Indian Dhal.
