Dairy-free Soft Scoop Style Ice-cream with real fruit.

Banana Raspberry Ice-Cream Bites - Recipe

Ingredients

  Ecomil Nature Organic Sugar Free Almond Drink 1L
200ml Almond Milk.

  Freeze Dried Banana Powder 100g (Sussex Wholefoods)
2 Tbsp of Banana Powder.

  Freeze Dried Raspberries 100g (Sussex Wholefoods)
4-5 Tbsp of roughly crushed Freeze Dried Raspberries.

  Spanish Orange Blossom Honey, Clear 350g (Honeycomb)
3-4 Tbsp Honey.

  Cashew Nut Butter 170g (Meridian)
2 Tbsp of Cashew Nut Butter.

  Vanilla Extract Nielsen Massey 118ml
½tsp of Vanilla Extract

  Xanthan Gum 110g (Doves Farm)
½tsp of Xanthan Gum

  Cocoa Oat Protein Flapjack 50g (Trek)
x1 Trek Morning Berry Oat Flapjack

  Morning Berry Protein Flapjack 50g (Trek)
x1 Trek Cocoa Oat Protein Flapjack


Method

  1. Put the Almond Milk into a large mixing bowl and add the Cashew Nut Butter, Xanthan Gum and Banana Powder.
  2. Whisk with an electric whisk or by hand until the mixture starts to thicken.
  3. Now add the honey and Vanilla Extract. Taste and add more honey if you wish.
  4. Gradually sprinkle some of the crushed raspberries into the mixture. Whisk for a short time. Add more raspberries if you wish.
  5. Spoon the mixture into a freezer proof container with a lid. Smooth down. Tap to disperse any air pockets. Place a piece of parchment/greaseproof paper on top.
  6. Place in the freezer for at least 4 hours. Remove and spoon into a mixing bowl. Whisk on the lowest setting on your hand mixer or alternatively use a fork to break up the ice-cream. Put the ice-cream mix back into the container with the parchment paper and place back into the freezer for at least 5-6 hours, or overnight. You can whisk the ice-cream a second time if you wish, but this probably won't be necessary if you have used an electric whisk.
  7. Remove around 5-10 minutes before wanting to serve.
  8. Cut both Trek Bars in half and using a fork and knife spread the ice-cream on top of each Trek Bar base. You can make the ice-cream layer as thick as you like. We used the majority of the mix for ours.
  9. Sprinkle some crushed Freeze-Dried Raspberries over the top of each and serve!
  10. If you double or triple the quanities in the recipe you can of course make many more ice-cream bites.
