Use in place of risotto rice and normal boiled rice.

This green spelt is from the same variety of spelt as normal spelt, but harvested a little early, when it is still green. It is then dried over a beechwood fire, giving it a light smoky aroma.
Spelt is used in a similar manner to barley or rice. It is a form of wheat.
Directions
Use 1 cupful of spelt per person. Place the spelt in a large pan of boiling water and simmer for 30-40 minutes. Drain and serve.
You can also use spelt in soups, as you would use barley. Simply add the spelt to the soup and leave to simmer thoroughly (30-40 minutes).
