Refreshing Wheatgrass Juice

Fresh Apple, Cucumber, Wheat Grass, Alfalfa Sprouts & Pea Shoots

Forgive its colour – this juicy drink is sweet, light and really refreshing! Best served chilled with crushed ice for a summer super-juice rejuvenating drink.

This is great for those who want the goodness of wheat grass but don’t like the taste. The main flavours here are cucumber and apple. Pea shoots are mild and sweet, and Alfalfa sprouts have a very fresh lettuce-like tatse which combines with the other flavours perfectly.

The wheatgrass refresher is packed full of Vitamins, including A, C, B vitamins, E, K as well as minerals like Calcium, Iron, Chlorophyll, Magnesium, Amino Acids, Phosphorus, Potassium, Zinc and Lecithin. The added apple not only gives a subtle sweetness through the cool cucumber flavour but it provides fibre and energy too.
This quantity makes 2 medium glasses.

Other Ingredients

2 x Gala Apples – fresh crisp and sweet.
Half a Cucumber.

Method

There really isn’t much to the juicing process. Either stick all the ingredients in a juicer or put it in a blender and sieve out the bits. You can add more or less apple, cucumber or wheatgrass to your preferred taste.

Sprouting tips:

Wheat grass sprouts take between 9 and 12 days until they are at the length you want. First simply soak the grain overnight, then leave in a germinator for 24 hours. Once sprouts begin to show, transfer into a tray filled with soil or capillary matting and drench heavily with water. Allow excess water to drain. Keep sprouts in a cool dark place and water well every day. In the last 3 days, you can keep the sprouts by the window so they can green up.

Alfalfa sprouts just need a 8 hour soak, then drained and left in a jar, glass or germinator to grow. Rinse the sprouts every day until they are at a length you are happy with. Normally they are just right at 3-4 days.

Serving tips: This photo shows the Wheat Grass Refresher decorated with extra afalfa spouts. What tastes really nice is having it with ice-cubes and a squeeze of lemon juice.
