Three Melon Merengue Smoothie Bowl

Other Ingredients

  • ¼ of a large watermelon
  • ½ of a Galia melon, de-seeded
  • ½ of a Canteloupe melon, de-seeded
  • 4 large strawberries
  • Zest of ½ a lemon
  • Zest of ½ an orange
  • A squeeze of orange & lemon juice

Method

  1. Using a melon baller, form melon balls out of the Galia and Canteloupe melons. Keep in a bowl to one side. You can make these a few hours in advance and keep chilled if you wish. They also act like ice-cubes for an extra refreshing result.
  2. In a blender or liquidiser, add chunks of the watermelon. Blend. Add the cashew nuts (you can soak these overnight if you wish). Blitz until you have a smooth liquid. Add a squeeze of lemon and orange juice.
  3. Evenly pour the watermelon mix into two separate soup or breakfast bowls.
  4. Share the melon ball medley between both bowls. Slice two of the strawberries in one bowl and two into the other.
  5. Sprinkle on 1 Tbsp of pumpkin seeds per bowl, in a rough row.
  6. Then sprinkle a line of Moringa powder on top of both bowls – use ½ tsp of Moringa powder per bowl.
  7. Evenly sprinkle the orange and lemon zest over both bowls and serve.
  8. Best prepared and eaten fresh!
