This golden brown-yellow rice is a particularly healthy rice. It has been produced by naturally breeding black rice with fragrant Thai rice, without having to use GM. Thus it delivers the benefits of black rice, with the fragrance and flavour of Thai Jasmine rice. It has a low glycemic index and is high in vitamin E, fibre, minerals and iron. The rice can equally be used in traditional Thai recipes as well as in risottos and salads.
This rice retains much of its natural bran and therefore cooks in a similar way to brown rice. If you like your rice a little softer you can pre-soak this rice for 2-3 hours before cooking.
The low glycemic index is due to the amount of natural bran in this particular rice. The bran slows absorption of sugar in the stomach and thus provides slower-release energy.
