Shiitake mushrooms are the most famous of the Japanese mushrooms. They are grown commercially on cut branches of the oak tree. As is the case for many mushrooms, the dried shiitake has a stronger flavour than the fresh. These mushrooms make excellent additions to a variety of dishes including soups, stir-fries and can even be grilled. From a nutritional point of view shiitake provide a good source of fibre, B Vitamins and Vitamin D.
They can be stored for a good year or more if kept in an airtight container and in a cool dark cupboard.
