Oat Amazake is a special ingredient with the pleasing texture of a pudding. It is a very simple food made just from cultured rice, water, oats and a little sea salt. The cultured rice converts the carbohydrates from the oats into simple sugars, which make it naturally sweet.
In Japan this paste is often used to make a warming drink, a little like the malted milky drinks found in the UK. Oat Amazake can be eaten straight from the jar cold or gently warmed for a porridge-like breakfast. Try Oat Amazake instead of yoghurt at lunch, with some fresh fruits or berries stirred through. It is both filling and satisfying.
The Amazake paste is also a useful sweet ingredient for making a variety of desserts and works well as a sweet filling.
