Mung beans provide an excellent source of protein and fibre. They have a similar cooking time to lentils: around 20-30 minutes. There is no need to soak these beans - just a quick wash will do, although soaking will help to reduce the cooking time. Mung beans only take around a minute or 2 in a pressure cooker.
Mung beans can also be sprouted. Not many people realise this, but you can actually plant these mung beans onto a piece of tissue paper (or into one of our germinators) and they will turn into tasty bean sprouts! It takes only 4-5 days.
Of course, you can also do normal things with mung beans, including using them for curries and soups. Our favourite tip is to mix them with various lentils and cook them all together. It's good to take in a variety of pulses all at once.
