Lucuma (Pouteria lucuma) is a subtropical fruit from Peru, first discovered by explorers in the 16th century. The flesh inside the Lucuma fruit has the texture of a hard-boiled egg yolk. It is then dried and ground into a powder, which has a sweet, biscuit-like flavour. This natural sweetness and depth of flavour makes it ideal for adding to pastry, cookie dough and stirring into smoothies and warm milk/milk alternatives.
