Lotus chilli oil has been prepared using a traditional method, following a Chinese Chiu Chow recipe. It consists of oil and contains little visible flakes of chilli, shallot and garlic throughout.
This oil can be added toward the end of dishes such as stir fry and noodles. It also trickles nicely over salads, vegetables and fish. This chilli oil is also perfect for dipping cooked vegetables, meats and Chinese dumplings. You could soak up the oil with a piece of crusty bread - this makes a great dinner party snack.
