Interestingly, curry leaves are not used as commonly in curries as we might think.
The leaves are used in broths, soups, pickles and chutneys.
Used widely in many vegetarian dishes in India & Sri Lanka.
Directions
Soak curry leaves in hot water to release the flavours. Add the whole lot to curries, curry-like dishes and soups. Curry leaves are for flavouring rather than eating, so be sure to pick the leaves out before eating!
