Cassia is is the form of cinnamon used in Indian Curries. It also known as Chinese Cinnamon, and differs from true cinnamon in the sense that it has a stronger flavour.
Cassia is for use in savoury dishes such as curries, North African cuisine, Chinese food and Middle-Eastern spicy foods. It is not used in desserts, as the flavour is strong. For desserts, use true cinnamon.
Some people take cassia as a dietary supplement, as cassia is thought to have a beneficial effect on glucose metabolism.
