Black Garlic is actually white garlic that has been aged. The garlic is gently heated, then stored and left to ferment for 3 weeks. The resulting garlic has a completely different flavour and texture to normal garlic.
Black garlic is sweet, soft and fudge-like with flavours similar to balsamic vinegar and soy sauce. Black garlic also has a mellower, less overwhelming flavour than normal garlic. Many people who do not like normal garlic find that black garlic is an excellent alternative!
