Barbeque Beef Marinade - Recipe


Add depth of flavour to your meat with this marinade

This simple marinade can transform the flavours on your BBQ

Marinading meat helps to tenderise it and this enables you to choose cheaper cuts of meat. We decided to try Braising Steak and make them into kebabs. This marinade would also work with pork. This recipe makes enough to marinade approximately 400g-600g of meat.

Ingredients:

- 100ml Red Wine
- 50ml Malt Vinegar or Balsamic
- 3 Tbsp Olive Oil
- 50ml Worcester Sauce
- 1 Tbsp Tomato Ketchup
- 50ml Shoyu Sauce or Tamari Sauce
- 3 Tbsp runny Honey
- 2 Tbsp Chilli Sauce
- 2 garlic cloves
- 2 shallots
- 2 tsp Thyme
- 1 tsp other mixed herbs (we used Herbs de Provence)
- 1 tsp Coarsely Ground Pepper

How to prepare the marinade

1) Finely slice the shallots and grate/crush the garlic cloves into a wide-based container with a lid.

2) Add the wine, vinegar, Worcester Sauce, Ketchup and Soy Sauce. Stir briefly.

3) Then add the honey and stir in well.

4) Finally add the herbs and pepper and stir.

5) Place the meat into the dish ensuring there are no air bubbles and all the meat is sufficiently covered in marinade.

6) Put the lid on and place in the fridge overnight or for 6-12 hours.

7) Tip: When making kebabs, chop the meat after the marinading process has been completed.
